If you're not familiar with his wines, be aware these amazing natural wines will totally surprise you, as they are really not what you should expect from the notion of Sancerre.
Riffault not only farms in biodynamic ways his neighbours do not, plowing many plots by horse and growing vegetation inbetween vines to encourage biodiversity - but alongside other winemaking techniques that give his range that "Sebastien Riffault flavour profile", he leaves his grapes on the vines very late, to the point where many of his grapes are partially affected by the fungus Botrytis (aka Noble Rot).
This 2012 vintage of Auksinis, with a bit of skin-contact, has notes of kiwi that linger to maximum delight, alongside touches of tangerine, pear, herbs and honey.
It has so much depth, as well as the awesome minerality that you expect from a conventional Sancerre.
Is Sebastien the king of Sauvignon Blanc? Probably, yeah.
